Ingredients
- Sweet potato · cooked peeled250 g
- Oats2 ½ cups
- Baking powder1 tsp
- Cinnamon3 tsp
- Nutmeg1 tsp
- Cardamom1 tsp
- Vanilla · powder3 + 1 tbsp
- Hemp heart2 tbsp
- Flax seed · ground2 tbsp
- Unsweetened applesauce4 oz
- Vegan butter · melted3 tbsp
- Maple syrup1 tbsp
- Almond milk2 cups
- Pecan · crushed⅓ cups
- Coconut sugar3 tbsp
Instructions
- Set the oven to 400°F (204°C).
- Mix the ground flaxseed with 5 tablespoons of water and set aside to thicken.
- Microwave the sweet potato in a bowl with a few tablespoons of water for 8 minutes, turning it halfway, until fully soft.
- Let it cool to room temperature, then peel it and cut off the ends.
- Mix the dry ingredients (oats, protein powder, cinnamon, nutmeg, cardamom if using, hemp hearts if using) with a fork, except the sweet potato.
- Mash the sweet potato into the dry ingredients.
- Gently fold in the flax egg, melted vegan butter, vanilla extract, maple syrup and almond milk until combined. The batter should be thick but not runny or dry. If runny, add 1 tablespoon of protein powder; if dry, add almond milk or water a tablespoon at a time.
- Mix the topping ingredients (oats, pecans, coconut sugar, cold vegan butter, cinnamon) in a separate bowl.
- Lightly oil mini jars or a baking dish, then add the batter. For jars, fill them three-quarters full.
- Sprinkle the topping over the batter.
- Bake for 25 to 30 minutes, until the top is golden and crispy.
- Let cool slightly before serving, especially from a baking dish, so it cuts more easily.
