Oven Baked Buffalo Wings - Crispy and Super Easy
Ingredients
- Chicken wing4 lb
- Baking powder4 tsp
- Salt3 ½ tsp
- Butter6 tbsp
- Flour1 tbsp
- Hot sauce½ cups
- Cooking spray
Instructions
- Pat the wings very dry with paper towels.
- Toss the wings with the salt and baking powder so they are coated on all sides.
- Set the wings on wire racks over lined baking sheets, spaced so they do not touch. Refrigerate uncovered for at least 12 hours, preferably overnight.
- Preheat the oven to 425°F with racks in the middle positions.
- Dry any wings with surface moisture. Line baking sheets with foil and set the wire racks on top. Grease the racks lightly with oil or cooking spray. Place the wings on the racks and bake 20 minutes, switching the sheets halfway through.
- Flip the wings and bake another 25 to 35 minutes, until crisp. Switch and rotate the sheets halfway through, flipping the wings a couple more times for even cooking.
- Meanwhile, melt the butter in a small saucepan over medium heat. Add the flour and whisk until lightly golden, about 2 minutes. Add the buffalo sauce, whisk together, and turn the heat to its lowest setting.
- Put the hot wings in a large bowl, pour the sauce over them, and toss well to coat.
