Ingredients

Instructions

  1. Take the meat out of the fridge 2 hours before cooking.
  2. Toss the prepared vegetables in duck fat, salt, pepper and herbs, then roast them in the fan oven at 350°F / 180°C for 45 minutes, stirring halfway through.
  3. Meanwhile, reduce the apple sauce in a saucepan over low heat for about an hour until thick.
  4. Season the pork chops heavily with grey salt.
  5. Heat the pan. When hot, add duck fat or neutral oil and sear the chops for 5 minutes on each side over medium-high heat.
  6. Preheat the fan oven to 330°F / 160°C.
  7. Top the seared chops with herbs and butter, and season with ground black pepper.
  8. Roast the chops in the oven for 30 minutes at 330°F / 160°C, until the internal temperature reaches 145°F / 63°C.
  9. Rest the chops in the pan for 5 minutes, then move them to a plate and rest for 10 more minutes. Pour off excess fat from the pan.
  10. Transfer the roasted vegetables and potatoes to the pan, glaze them with the juices and bits in the pan, and keep warm.
  11. Plate the pork chops with the roasted vegetables and the reduced apple sauce.
