- Ginger · peeled1 inch
- Basil4
- Celery2
- Parsley4
- Bouillon powder1 ½ tsp
- Salt½ tsp
- White pepper · ground½ tsp
- Onion2
- Habanero pepper1
- Oil½ cups
Instructions
- In a blender, combine the celery, parsley, basil, garlic, ginger and one roughly chopped onion. Add 1/4 cup water and blend into a paste. This is the green spice mixture; set it aside.
- Trim the fins with kitchen shears, cutting them out toward the tail. Cut out the gills from the head with a paring knife.
- Rinse the fish well and pat dry. Make four diagonal cuts on each side. Sprinkle with 1/4 teaspoon salt and 1/4 teaspoon white pepper and rub all over.
- Mix 4 tablespoons of the green spice mixture with 2 tablespoons oil and 1 teaspoon bouillon powder. Rub it over the fish, pushing some into the cuts.
- Generously oil a baking tray, place the fish on it, cover with foil and marinate for at least 30 minutes or overnight.
- Bake covered at 400°F (200°C) for 20 minutes.
- Remove the foil, brush the fish with a little oil, then broil until it takes on color.
- Rest the fish before serving with green sauce and plantains.
- For the green sauce: in a saucepan, combine the remaining green spice mixture, remaining oil and bouillon powder. Add 1/4 teaspoon white pepper and 1/4 teaspoon salt. Simmer on medium heat for about 5 minutes, stirring.
