Overnight Cinnamon Rolls
Ingredients
- Milk1 cup
- Sugar1 ⅔ cups
- Yeast1
- Butter · softened1 cup
- Bread flour4
- Egg2
- Salt½ tsp
- Oil or butter for the bowl2 tsp
- Brown sugar⅔ cups
- Cinnamon · ground1
- Cream cheese · softened4 oz
- Heavy cream1 tbsp
- Vanilla½ tsp
Instructions
- Whisk the warm milk, 2 tablespoons of sugar and the yeast in a stand mixer bowl; let it sit 5 to 10 minutes until foamy.
- Add the remaining sugar and the butter and beat on medium until the butter is slightly broken up. Add about 1 cup of flour, the eggs and salt, and beat on low for 30 seconds. Scrape the bowl, add the remaining flour and beat on medium for about 2 minutes until the dough pulls away from the sides. If it is too sticky, add flour 1 tablespoon at a time; if too dry and crumbly, add milk 1 teaspoon at
- Knead on low speed with the dough hook for 5 minutes, or by hand on a lightly floured surface for 5 minutes, adding up to 1 teaspoon of flour at a time if too sticky. The dough should be smooth, supple and elastic; it is ready when a poke springs back slowly and it passes the windowpane test.
- Grease a large bowl, add the dough and turn to coat. Cover and let rise at room temperature for 1½ to 2 hours, until doubled.
- Grease a 9×13-inch baking dish or line it with parchment.
- Punch down the dough and roll it on a lightly floured surface into a 12×18-inch rectangle, letting it rest 10 minutes if it keeps shrinking.
- Spread the softened butter over the dough. Mix the brown sugar and cinnamon and sprinkle evenly over the butter. Roll tightly into an 18-inch log, tucking any spilled filling on top. Cut into 12 even rolls about 1.5 inches wide with a sharp knife and arrange in the pan.
- Cover and let the rolls rise until puffy, about 1 hour (or use the overnight option in the notes).
- Preheat the oven to 350°F (177°C).
- Bake for 25 to 28 minutes, until lightly browned on top, rotating the pan halfway through; tent with foil if browning too fast. Cool on a rack for about 10 minutes.
- Beat the cream cheese until smooth. Add the icing sugar, cream or milk and vanilla; beat on low 30 seconds, then on high 1 minute. Spread over the warm rolls and serve immediately.
