Pad See Ew
Ingredients
- Noodle · dried200 g
- Dark soy sauce2 tsp
- Oyster sauce1 ½ tbsp
- Soy sauce1 tbsp
- Vinegar2 tsp
- Sugar2 tsp
- Vegetable oil3 tbsp
- Garlic · finely chopped2 cloves
- Chicken thigh1 cup
- Egg1
- Broccoli4
Instructions
- Trim the Chinese broccoli ends and cut into 7.5 cm (3 inch) pieces. Separate the leaves from the stems, and halve thick stems lengthwise so they are no more than 0.8 cm (0.3 inch) thick.
- Cook the noodles according to the packet, drain, and time it so they are used right away.
- Mix the sauce ingredients until the sugar dissolves.
- Heat 1 tbsp oil in a very large skillet or wok over high heat.
- Add the garlic and cook for 15 seconds. Add the chicken and cook until it is mostly white rather than pink.
- Add the Chinese broccoli stems and cook until the chicken is almost cooked through.
- Add the broccoli leaves and cook until just wilted.
- Push everything to one side, crack in the egg and scramble it.
- Transfer everything from the wok to a plate and wipe the wok clean.
- Return the wok to the stove and heat 2 tbsp oil over high heat until it starts to smoke. Add the noodles and sauce, and toss as few times as possible so the sauce spreads and the noodle edges caramelise, about 1 to 1 1/2 minutes.
- Return the chicken and vegetables to the wok, toss quickly, and serve immediately.
