Ingredients

Instructions

  1. Put the salmon fillets on a plate.
  2. Mix the salt, garlic salt, pepper, paprika and dried parsley, then sprinkle over the salmon and press it on.
  3. Heat the oil and butter in a large frying pan over medium-high heat.
  4. Place the salmon in the pan skin-side up, with the spiced side in the oil.
  5. Cook for 3–4 minutes until golden brown, then transfer to a plate skin-side down.
  6. Lower the heat to medium, add the garlic and cook for 30 seconds, stirring constantly.
  7. Add the orzo and stir with the garlic, then add the chicken stock and stir again.
  8. Nestle the salmon into the orzo, skin-side down.
  9. Raise the heat to medium-high and bring to the boil, then lower the heat and simmer for 8–9 minutes, stirring occasionally and moving the salmon to stir underneath, until the orzo is al dente.
  10. Stir in the cream, parmesan, lemon zest and juice, salt and pepper.
  11. Turn off the heat, scatter over the parsley and a little black pepper, arrange the lemon wedges and serve.
