Ingredients

Instructions

  1. Trim off any excess fat from the steaks if you like.
  2. Pat the steaks dry with paper towel so they sear well.
  3. Heat a cast iron skillet over medium-high heat for 4-5 minutes, until smoking hot.
  4. Meanwhile, season both room-temperature steaks evenly with the salt and pepper.
  5. Pour the oil into the skillet and swirl it to coat the bottom.
  6. Place the steaks in the skillet, pressing each one down once it touches the pan.
  7. Cook one side for 4 minutes, or until done to your liking. Flip and cook the other side for 3-4 minutes.
  8. After flipping, add the smashed garlic around the steaks, the rosemary and the thyme.
  9. Cut the butter into 2 or 4 pieces and add to the sides of the pan. Once melted, baste the steaks with the butter several times. Garnish with parsley if you like.
  10. Remove from the heat, cover loosely with foil and rest for 5 minutes. Slice thinly against the grain and serve warm.
