Instructions

  1. For the bhurji: heat the butter and oil in a pan, then stir in the gram flour over medium-low heat until golden brown.
  2. Add the onion, tomato, green chilli, ginger and salt. Cook over high heat for 2 to 3 minutes.
  3. Lower the heat, add the powdered spices and a splash of hot water, and cook for 1 to 2 minutes.
  4. Crumble the paneer by hand into the pan with the milk, cook for 3 to 4 minutes, then taste and adjust the salt.
  5. Stir in the kasuri methi, black pepper and fresh coriander.
  6. For the chutney: blend all the chutney ingredients to a fine paste, adding water as needed.
  7. For the toast: spread butter and chutney on a slice of bread, add a generous layer of bhurji and some grated cheese.
  8. Butter a hot pan, add the assembled toast, cover and cook on low until the bottom is light golden.
  9. Add a splash of water around the toast, cover again and cook on low until the cheese melts.
  10. For the sandwich: layer butter, chutney, bhurji, cheese, tomato, chaat masala, onion and capsicum between three slices of bread, then toast in a sandwich toaster, with butter on the outside, over medium-high heat, turning occasionally until crisp and golden on both sides. Cut and serve.
