Ingredients

Instructions

  1. Cut the paneer into pieces about 3/4 by 2 inches. If using fresh tomatoes, puree them in a blender.
  2. Heat the oil or ghee in a pan over medium heat. Add the cumin seeds and whole chilies and fry for 1 minute.
  3. Add the sliced onions and sauté until light golden, about 5 minutes. Stir in the ginger garlic paste and sauté for 1 to 2 minutes.
  4. Lower the heat. Stir in the chili powder, garam masala, coriander powder if using, turmeric and salt. Immediately pour in the tomato puree.
  5. Cook over medium-high heat until slightly thick, 5 to 7 minutes (2 to 3 minutes if using store-bought puree).
  6. Add the bell peppers and diced onion and stir-fry over medium-high heat for 4 to 5 minutes, until slightly tender but still crunchy. Add 1 to 2 tablespoons of water if the pan dries out.
  7. Taste and adjust with more salt, vinegar or tomato paste (only if needed) and sugar if using.
  8. Lower the heat, crush the kasuri methi in your hands and sprinkle it in. Gently stir to coat the paneer.
  9. Cover and cook on very low heat for 2 to 3 minutes, until heated through. Garnish with coriander leaves and serve.
