- Vinegar¾–1 colher de sopa
- Sugar/ jaggery1 colher de chá
- Fenugreek1 colher de chá

Modo de preparo
- Cut the paneer into pieces about 3/4 by 2 inches. If using fresh tomatoes, puree them in a blender.
- Heat the oil or ghee in a pan over medium heat. Add the cumin seeds and whole chilies and fry for 1 minute.
- Add the sliced onions and sauté until light golden, about 5 minutes. Stir in the ginger garlic paste and sauté for 1 to 2 minutes.
- Lower the heat. Stir in the chili powder, garam masala, coriander powder if using, turmeric and salt. Immediately pour in the tomato puree.
- Cook over medium-high heat until slightly thick, 5 to 7 minutes (2 to 3 minutes if using store-bought puree).
- Add the bell peppers and diced onion and stir-fry over medium-high heat for 4 to 5 minutes, until slightly tender but still crunchy. Add 1 to 2 tablespoons of water if the pan dries out.
- Taste and adjust with more salt, vinegar or tomato paste (only if needed) and sugar if using.
- Lower the heat, crush the kasuri methi in your hands and sprinkle it in. Gently stir to coat the paneer.
- Cover and cook on very low heat for 2 to 3 minutes, until heated through. Garnish with coriander leaves and serve.
