Paneer Tikka on Tawa & in Oven
Ingredients
- Oil1 ½ tbsp
- Chili powder1–1 ½ tsp
- Salt½–¾ tsp
- Turmeric¼ tsp
- Garam masala1 tsp
- Coriander seed · powder1–1 ½ tsp
- Chaat masala1 tsp
- Fenugreek1 tsp
- Garlic · paste1 ¼ tsp
- Greek yoghurt6 tbsp
- Paneer200 g
- Onion1
- Bell pepper2
- Mustard oil1 tbsp
- Chickpea flour1 tbsp
- Carom seed¼–½ tsp
Instructions
- Stir together the thick yogurt, chilli powder, garam masala, turmeric, coriander powder, kasuri methi, chaat masala, ginger garlic paste and salt.
- Optional: fry 1 tablespoon besan in part of the oil on low heat until fragrant, cool it, then mix into the marinade with the ajwain.
- Add the remaining oil and mix well. Check salt and spice, adding more salt and chilli if needed.
- Add the capsicum and onion cubes and mix well, then gently coat the paneer cubes in the marinade.
- Cover and refrigerate for 1 to 2 hours. Do not marinate overnight, as the paneer may break.
- Thread the paneer, capsicum and onion alternately onto skewers (large skewers for oven, small for tawa).
- Oven: preheat to 230°C (450°F) for at least 15 minutes. Line a baking tray with parchment, place the skewers on it and spray with oil. Grill for 10 to 11 minutes, brushing with leftover marinade halfway. Move to a higher rack and broil 2 to 3 minutes until slightly charred. Remove when golden or lightly charred.
- Tawa: heat a tawa with 1 tablespoon oil spread evenly. Add the skewers on medium heat and turn often until golden.
- Tawa finish: place a wire rack over a direct gas flame, set the skewers on it and grill until char-grilled on all sides.
- Brush the hot tikka with butter or mustard oil before serving.
- Air fryer alternative: air fry at 200°C (390°F) for 5 minutes, brush with marinade and air fry 2 more minutes, then brush with butter or mustard oil.
