- Papdi15
- Potato1
- Moong sprouts½ cups
- Yoghurt½ cups
- Sugar3 ½ tsp
- Onion1
- Cilantro2 tbsp + 2 cups
- Nylon sev½ cups
- Cumin · roasted powder¼–½ tsp + ½ tsp + ½ tsp
- Chaat masala½ tsp
- Mint½–¾ cups
- Chili pepper2 + 12–14
- Ginger¼ inches
- Garlic1 + 3–4
- Lemon1–2 tsp
- Chana dal · roasted1–2 tbsp
- Salt¼ tsp
- Tamarind¼ cups
- Jaggery½ cups
- Ginger powder¼–½ tsp
- Chili powder¼–½ tsp
- Coriander seed · powder½ tsp
Instructions
- Make the green chutney: blend coriander, mint, garlic, ginger, green chilli, cumin, salt and lemon juice with the optional fried gram, adding just enough water to make a fine, thick chutney.
- Make the tamarind chutney: soak the tamarind, jaggery and dates (optional) in hot water, then boil until soft.
- Add the chilli powder, cumin, coriander powder, salt and red chilli powder to the pot. Cool and blend well, adding more water if needed.
- Pass the chutney through a strainer. If you skipped the dates, you can skip blending and just strain it.
- Taste and adjust the jaggery to your liking.
- Make the optional garlic chutney: soak the red chillies in a little hot water until soft, then blend them with the garlic and a little sugar, adding water as needed, to a thick, smooth paste.
- Whisk the curd with the sugar in a bowl until smooth. Thin the chutneys with water if you like, as a thicker chutney keeps the papdi crisp.
- Place the papdi on serving plates. Top with the sliced or chopped boiled potato and the steamed moong sprouts, if using.
- Add garlic chilli chutney, then the chopped onion, then the curd.
- Add a little green chutney, then the tamarind chutney.
- Sprinkle with cumin powder and chaat masala, then a generous amount of nylon sev and the chopped coriander.
- Serve straight away.
