Ingredients
- Butter175 g
- Dijon mustard1 tbsp
- Salt½ tbsp
- Nutmeg · ground¼ tsp
- Flour200 g
- Mozzarella cheese · grated50 g
- Pecorino cheese · grated40 g
- Egg3
- Sage12–15
Instructions
- In a medium saucepan over medium heat, bring the water, butter, Dijon mustard, nutmeg and salt to a boil.
- Once the butter has melted, add the flour and stir with a wooden spoon until a smooth dough forms.
- Lower the heat and keep stirring until the dough pulls away from the sides of the pan.
- Off the heat, stir in the grated cheeses, then add the eggs one at a time, mixing each in fully before the next. Herbs can be added at this stage if you like.
- Transfer the dough to a large piping bag.
- Bring a large pot of salted water to a boil. In batches, pipe the dough into the water, cutting 1-inch lengths with a knife so they drop straight in.
- When the gnocchi float, cook them for 2 minutes more. Lift them out with a slotted spoon onto a kitchen towel.
- In a large nonstick skillet over medium heat, melt the 75g butter with the sage leaves.
- When the butter has melted and the leaves are crisp, add the gnocchi and fry for about 2-3 minutes until golden.
- Serve sprinkled with parmesan.
