- Garlic · minced2
- Tomato paste3 tbsp
- Potato · peeled chopped2
- Chicken stock2 cups
- Salt1 tsp
- Pasta½ lb
- Parmesan cheese · grated½ cups

- Cook the chopped pancetta in a large saucepan over medium heat, stirring now and then, until golden brown, about 8 minutes.
- Add the onion and cook, stirring occasionally, until soft, about 5 minutes. Stir in the garlic and cook until fragrant, about 2 minutes.
- Stir in the tomato paste and cook without stirring for 3 minutes. Add the potatoes and stir to coat.
- Pour in the stock, water and salt and bring to a simmer over medium heat. Lower to medium-low, cover and simmer until the potatoes are fork-tender, about 20 minutes, stirring occasionally with the lid off.
- Add the pasta and stir well. Simmer uncovered over medium-low for 15 minutes, stirring often so it doesn't stick.
- Stir in the Parmesan and parsley and serve.
