Preparación
- Put the chicken in a bowl with the curd, garlic paste, ginger paste, turmeric, red chilli powder, black pepper and salt to taste. Mix well and set aside.
- For the first gravy, heat the oil in a pan. Add the cinnamon, green cardamom, cloves, cumin seeds, chopped ginger and garlic, and fry until the raw smell goes.
- Add the chopped onions and fry until nicely browned. Add the turmeric, red chilli powder and coriander powder and cook for a few seconds.
- Add the chopped tomatoes and cook until soft.
- Add the water, then set aside half of the masala.
- To the remaining masala in the pan, add the marinated chicken and the green chillies. Cook for 5 minutes, then cover and cook on low heat until the chicken is done.
- For the second gravy, heat the oil in another pan. Add the cumin seeds, ginger, garlic and salted fenugreek leaves, and sauté for a minute.
- Add the diced onion and capsicum and sauté for another minute. Add the turmeric, red chilli powder, cumin powder and coriander powder.
- Mix in the reserved masala, then add the cashew paste and sauté for 3–4 minutes on low heat. Add the salt and the water.
- Pour this gravy over the chicken and mix. Add the garam masala, green chilli, julienned ginger and dried fenugreek leaves, mix again, and cover for 2 minutes.
- Stir in the fresh cream and serve.
