Peach Cobbler
Ingredients
- Peach · peeled chopped10 cups
- Brown sugar¼ cups
- Cornstarch1 tbsp
- Lemon1 tbsp
- Vanilla1 tsp
- Cinnamon · ground6 ½ tsp
- Nutmeg · ground0.13 tsp
- Ginger · ground0.13 tsp
- Salt0.63 tsp
- Flour2 cups
- Sugar½ cups
- Baking powder1
- Baking soda¼ tsp
- Butter · cubed½ cups
- Buttermilk · beaten½ cups
Instructions
- Preheat the oven to 350°F (177°C). Lightly grease a 9×13-inch baking pan.
- Mix all the filling ingredients in a large bowl, then spread them in the pan. Bake for 10 minutes, then take out and set aside. Keep the oven on.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt. Cut in the cold butter until the mix looks like coarse crumbs the size of peas. Add the buttermilk and mix gently until just combined. The dough should be slightly sticky; if it is too dry, add 1 more tablespoon of buttermilk.
- Flatten handfuls of dough into patties and place them over the warm peach filling, covering most of the peaches.
- Brush the dough with egg wash and sprinkle with cinnamon sugar, if using.
- Bake for 40 to 50 minutes, until the topping is golden brown and the filling bubbles at the edges. A toothpick inserted in the topping should come out clean.
- Set the pan on a cooling rack and let it cool for 5 minutes before serving.
