- Peach · peeled diced4
- Sugar¼ xícara
- Cornstarch2 colheres de sopa
- Spring roll wrapper16
- Canola oil · for frying
Modo de preparo
- In a large non-stick pan, combine the mangoes, peaches and sugar. Simmer on low heat until the fruit starts to break down, about 10 minutes.
- In a separate bowl, mix the cornstarch and water into a smooth slurry.
- Add the slurry to the pan, bring to a low boil and cook until thickened, 2 to 3 minutes. Transfer to a bowl and cool for about 10 minutes.
- Place two wrappers on the work surface, slightly overlapping. Spoon about 2 tablespoons of filling onto the lower third of the wrappers. Fold in the sides as you roll, dampen the end with water and seal. Repeat with the remaining wrappers.
- Heat about 4 inches of canola oil in a large heavy pot to 350°F (176°C).
- Fry the rolls in batches until deep golden brown, 3 to 4 minutes. Drain on a paper towel-lined sheet, then repeat with the rest.
