Peach Pie Crumb Bars

Ingredients

Instructions

  1. Preheat the oven to 177°C (350°F). Line an 8-inch square pan with parchment, leaving overhang on all sides.
  2. In a food processor or large bowl, combine the flour, 1/2 cup of the oats, brown sugar, cinnamon and salt, then pulse or whisk. Add the cold cubed butter and pulse or cut it in until pea-sized crumbs form; the mixture should hold when pressed. Set aside 1 cup of this mixture, mix in the remaining 1 tablespoon of oats and the sliced almonds, and keep this topping aside for step 5.
  3. Press the rest of the crumb mixture evenly into the lined pan. Bake for 15 minutes, then raise the oven temperature to 191°C (375°F).
  4. Whisk the egg, sugar, flour, vanilla, almond extract and lemon zest until combined. Fold in the peach chunks. Make this filling promptly, since it becomes too runny if left to sit.
  5. Pour the filling over the hot crust and sprinkle the topping evenly over it. Bake for 40–42 minutes, until lightly browned on top.
  6. Cool in the pan on a rack for 1 hour, then refrigerate for at least 2 hours. Lift the bars out using the overhang and cut into squares with a sharp knife, wiping it clean between cuts.
  7. Whisk the confectioners' sugar, cream or milk and vanilla until smooth and pourable, then drizzle over the bars.
