Instructions

  1. Rinse the rice three times in a bowl, then soak it for no more than 20-25 minutes while you prep the other ingredients. Drain it completely.
  2. In a pot or pressure cooker over medium heat, fry the cashews in the ghee until golden, then remove them to a plate.
  3. Add the whole spices and stir until they sizzle. Add the onions and green chillies and sauté until golden, about 7-8 minutes.
  4. Stir in the ginger garlic paste and sauté for 1 minute until aromatic.
  5. Add the mint leaves and sauté for 1-2 minutes until wilted. Add the peas and rice. For a toastier rice, you can fry the rice on high heat for 2 minutes without stirring much.
  6. Add the salt and water (hot water if using a pot) and mix well. Taste and adjust the salt; it should taste slightly salty.
  7. Stovetop pot: bring to a rolling boil on high, reduce to medium and cook partly covered for 7-8 minutes. Then lower to low, cover and cook until the water is fully absorbed, about 8-10 minutes more.
  8. Stovetop pressure cooker: cover and cook on medium heat until you hear 1 whistle, then turn off. For firmer rice, release the pressure manually by lifting the whistle with a spatula, carefully.
  9. Fluff with a fork and garnish with the fried cashews.
  10. Instant Pot: on sauté, heat the ghee, add the whole spices, then the onions and chillies, and sauté until golden, 4-5 minutes. Add the ginger garlic paste and sauté 30-40 seconds.
  11. Instant Pot: stir in the peas and mint and sauté 2 minutes until aromatic, then add the rice and salt.
  12. Instant Pot: pour in 1¾ cups (420 ml) water, press cancel, and scrape up any stuck bits. Taste and adjust salt.
  13. Instant Pot: seal the lid, set the vent to sealing, press pressure cook (high) and set 5 minutes.
  14. Instant Pot: when it beeps, wait 4-5 minutes, then release the rest of the pressure manually by moving the vent to venting. For softer rice, let the pressure drop naturally for 8 minutes before releasing.
  15. Instant Pot: fluff with a fork before serving.
