Pecan Pie Cheesecake
Ingredients
- Graham cracker2 cups
- Sugar6 tbsp
- Butter · melted¾ cups
- Cream cheese · softened32 oz
- Brown sugar1 ½ cups
- Sour cream1 cup
- Vanilla1 tsp
- Lemon1 tsp
- Cinnamon · ground¼ tsp
- Egg3
- Pecan1
- Heavy cream6 tbsp
- Salt
- Corn syrup1 tbsp
Instructions
- Set one rack to the center and a lower rack for the water bath, then preheat the oven to 350°F (177°C).
- Grind the full graham crackers into fine crumbs, mix in the sugar, then stir in the melted butter until sandy. Press firmly into an ungreased 9- or 10-inch springform pan, partly up the sides, without packing too hard. Pre-bake for 10 minutes, then let it cool slightly.
- Beat the cream cheese and brown sugar on medium-high speed until smooth and creamy, about 2 minutes. Add the sour cream, vanilla, lemon juice and cinnamon and beat until combined. Add the eggs one at a time on medium speed, mixing just until blended after each. Stop as soon as the last egg is in.
- Pour the batter into the warm crust and smooth into an even layer.
- Put a large metal pan (such as 9×13 inch, not glass) on the lower rack and pour in boiling water to about 1 inch deep. Close the oven immediately. Place the cheesecake on the center rack.
- Bake for 55 to 70 minutes until the center is almost set. If the top browns too quickly, tent it with foil halfway through. The center should wobble slightly when the pan is gently shaken.
- Turn off the oven, open the door slightly and let the cheesecake cool inside for 1 hour. Then cool completely at room temperature and refrigerate for at least 4 hours or overnight.
- Preheat the oven to 300°F (150°C). Spread the pecans on a parchment- or silicone-lined baking sheet and toast for 8 to 10 minutes until fragrant and lightly browned. Set aside.
- Melt the butter with the brown sugar, cream, salt and corn syrup in a medium saucepan over medium heat, stirring until combined and simmering. Simmer for 1 to 2 minutes without stirring, then remove from heat and stir in the toasted pecans. Cool completely; it thickens as it cools.
- Loosen the chilled cheesecake from the springform rim and remove the rim. Spread the cooled pecan topping over the cheesecake or onto each slice. Garnish with whipped cream if desired.
- Slice with a clean, sharp knife, wiping and dipping it in warm water between slices for neat cuts.
