- Extra virgin olive oil4 tbsp
- Garlic3
- Cayenne pepper1
- Chili flake · flakes½ tsp
- Tomato · canned crushed800 g
- Black pepper¼ tsp
- Sugar½ tsp
- Parmesan cheese

Instructions
- Heat the oil in a large pot over medium heat.
- Add the garlic and stir for 10 seconds, then add the cayenne and chilli flakes. Cook for about 1 minute, until the garlic is light golden.
- Add the crushed tomato, salt and pepper, then rinse the tomato cans with a little water and add that to the pot.
- Turn the heat up to high and stir. Once it simmers, reduce to medium and simmer for 15 minutes. At the 10-minute mark, taste; if the sauce is sour, add the sugar.
- Meanwhile, bring a large pot of water to the boil with 1 tablespoon of salt. Add the pasta and cook according to the packet directions.
- Just before draining, stir the pasta pot well, then scoop out 1 cup of the cooking water and set it aside. Drain the pasta.
- Add the pasta to the sauce with 1/2 cup of the reserved cooking water and toss on the stove until well coated. Add more cooking water if needed to loosen the sauce.
- Divide between bowls and serve immediately, topped with parmesan and parsley if using.
