- Garlic · diced2
- Cashew½ cups
- Tomato paste¼ cups
- Chili flake · flakes1 tsp
- Vodka3 tbsp
- Parmesan cheese · finely grated, grated1 oz + 50 g
- Extra virgin olive oil2 tbsp
- Basil · roughly
- Salt

Instructions
- Soak the cashews in boiling water for 20 minutes while you prepare the pasta sauce base.
- In a large skillet, sauté the onion in 1 tablespoon of olive oil and a pinch of salt over medium heat. Once translucent, add the garlic and red pepper flakes and sauté for one minute.
- Add the tomato paste and the second tablespoon of olive oil. Sauté for 5 to 8 minutes until the paste turns a deep red. Add a splash of water if needed to prevent burning.
- Add the vodka (or substitute) and cook for a couple of minutes until mostly absorbed.
- Meanwhile, boil the pasta in a large pot of salted water until al dente, about 3 minutes less than the package time. Reserve some pasta water before draining.
- Drain the cashews and blend them with ½ cup of warm water until creamy.
- Add the cashew cream to the pan with a ladle of pasta water. Season with salt and pepper, and adjust the spice level to taste.
- Add the cooked pasta, parmesan, torn basil and a drizzle of olive oil. Add a ladle of pasta water, stir gently and cook together for a couple of minutes, adding more pasta water if needed for a thick, creamy sauce. Serve.
