Ingredients

Instructions

  1. Rice: Bring lightly salted water to a boil in a medium saucepan. Add the turmeric and rice and cook until tender. Drain in a colander, move the hot rice to a bowl, stir in the chopped cilantro until well combined, and set aside.
  2. Slaw: In a bowl, toss the shredded carrots and red cabbage with the honey, lime juice and soy sauce. Set aside.
  3. Shrimp: In a large bowl, mix the shrimp with the Cajun seasoning, mustard powder and egg until evenly coated. Add the cornstarch and toss again until fully coated.
  4. Once the oil is hot, add the shrimp in a single layer. Cook about 1 to 2 minutes per side until golden brown and cooked through.
  5. Move the cooked shrimp to a paper towel-lined plate to drain. Repeat until all the shrimp are cooked.
  6. Assemble: spread rice in a rectangle down the middle of a jumbo tortilla. Top with 2 or 3 baby romaine leaves, then 6 to 8 shrimp, then about 1/3 cup of slaw, then drizzle with salsa verde.
  7. Fold the left and right sides of the tortilla toward the center. Lift the bottom flap over the filling, tuck it in tightly, then roll up tightly to seal.
  8. Serve the burritos immediately.
