Perfect for busy moms like! One Pot Beef Fried Rice
Ingredients
- Garlic5 cloves
- Ginger1 inch
- Beef1 lb
- White pepper¼ tsp
- Salt1 tsp
- Vegetable oil5 tbsp
- Onion · chopped1 cup
- Rice2 cups
- Curry · powder1 tsp
- Stock cube2
- Carrot1
- Green bean10
Instructions
- Blend the garlic and ginger into a paste, adding a little water if needed.
- Rub one teaspoon of the garlic-ginger paste into the beef, then add the white pepper and one quarter teaspoon of salt. Mix well.
- Heat a non-stick pot on high and add 1 tablespoon of oil, swirling to coat the base. Add half the beef in a single layer and brown for about 5 minutes on one side, then about 4 minutes on the other. Remove and brown the rest the same way.
- Add the remaining oil to the pot and heat for about 2 minutes on high. Add the onion and stir-fry for 2 minutes.
- Rinse the rice and drain it well.
- Add the rice to the pot and stir constantly for 5 minutes so it fries without burning.
- Stir in the curry powder, then the remaining garlic-ginger paste, and cook for about 1 minute.
- Add the 4 cups of water, the salt and the seasoning cubes, and stir. Return the browned beef to the pot.
- Cover the pot tightly with its lid, wrapped in a large sheet of foil folded over the edges. Cook on low for 15 minutes.
- Open the pot, spread the diced carrot and green beans over the rice, close it and turn off the heat. Rest for 5 minutes.
- Fluff the rice to mix in the vegetables and serve warm.
