Ingredients

Instructions

  1. Soak 16 to 20 bamboo skewers, broken in half, in water for at least 30 minutes.
  2. Cut the chicken breasts into large cubes. Put them in a freezer bag with the olive oil, salt, pepper, chili flakes, oregano, garlic, lemon zest and juice, parsley and thyme. Seal and coat well, then refrigerate for 2 hours.
  3. Tenderize the sirloin with a jaccard or poke it 10 to 12 times with a thin sharp knife. Cut each steak in half, then into chunky squares about the size of the chicken.
  4. Whisk the Worcestershire sauce, soy sauce, aged balsamic, 12 g salt, 5 g pepper, Dijon, 65 g olive oil and agave syrup. Put the beef in a freezer bag with two-thirds of this marinade, seal, and refrigerate for 2 hours. Keep the rest.
  5. Cut the portobello into chunky cubes slightly smaller than the meat. Peel the eggplant and cut into cubes about 2.5 cm across.
  6. Put the mushrooms and eggplant in a freezer bag, pour in the reserved beef marinade, seal, and marinate for 2 hours.
  7. Preheat the grill to its highest setting.
  8. Thread the chicken onto soaked skewers, about 5 pieces per half skewer. Thread the beef onto separate skewers, about 5 pieces each.
  9. Cut the zucchini into thick half-moons and the bell peppers into large rectangles. Toss with a long drizzle of olive oil, a pinch of salt and pepper, and let stand 10 minutes.
  10. Thread the marinated mushrooms and eggplant onto more soaked skewers with the zucchini and bell pepper, starting and ending with zucchini.
  11. Clean and oil the grill. Cook the chicken and beef skewers with the lid closed for 10 to 15 minutes, turning after about 5 minutes, until the chicken reaches 60°C (150°F) and the steak reaches 55°C (130°F) for medium-rare or your preferred doneness.
  12. Add the vegetable skewers to the grill later, cooking for 10 to 12 minutes and turning halfway, until browned and tender.
  13. Rest the meat skewers under a foil tent for a few minutes while the vegetables finish. Serve over saffron rice.
