Ingredients

Instructions

  1. Put the salt and flour in a large bowl and set aside, without mixing.
  2. In a tabletop mixer bowl, combine the water, milk, yeast and sugar. Add half a cup of flour and whisk. Rest 10 minutes until a foamy cloud forms on top.
  3. Whisk the flour and salt together, then add them to the activated yeast along with the yogurt and oil.
  4. Knead on low speed for 8 minutes, then on medium for 2 more minutes. The dough will be very sticky.
  5. Move the dough to a large bowl greased with a few tablespoons of oil, turn it to coat, cover with plastic wrap and rest 45 minutes to 1 hour, until doubled.
  6. Preheat the oven to 525°F (275°C).
  7. Lightly flour the work surface, turn the dough onto it and dust with flour. Roll it until it is easy to handle and the top is no longer sticky; the inside stays sticky. Don't add too much flour or the pitas will be dry.
  8. Cut the dough into 8 to 10 equal pieces and roll each into a round, using as little flour as possible. Oil the work surface and your hands first if needed.
  9. Line 2 to 3 baking trays with parchment and place the pitas on them.
  10. Bake about 6 minutes, until the tops are lightly colored with golden spots. For the final minute, you may move the tray under the broiler to add color, watching closely so they don't burn.
  11. Transfer to a plate or tray and serve warm.
