Perfect Texture Vegan Dumpling with great chew (QQ) - Jiao Zi
Ingredients
- Flour2 cups
- Salt½ tsp + 1 pinch
- Vegetable oil
- Ginger · grated1 tsp
- Carrot1 cup
- Tofu5 oz
- Edamame bean · frozen1 cup
- Cabbage½
- Soy sauce3 tbsp
- Oyster sauce1 tbsp
- Sugar1 tsp
- Mushroom¼ tsp
- Cornstarch
- Vinegar2 tbsp
- Sesame oil1 tbsp
- Cilantro · chopped
- Chile oil with sediment
- Sesame seed · toasted
Instructions
- In a stand mixer with the paddle attachment, combine the flour and salt. Add the warm water and knead on low speed for 8 to 10 minutes, until a stiff dough forms. Without a mixer, mix flour, salt and water in a bowl until no dry spots remain, then knead by hand until stiff.
- Cover the bowl tightly and rest the dough for 10 minutes. Then knead on the counter until smooth, return it to the bowl, cover, and rest for 45 minutes.
- Heat 1 tablespoon oil in a large nonstick skillet over medium heat. Fry the ginger until fragrant, about 1 minute. Add the carrot and cook for 2 minutes.
- Add the tofu and cook, turning occasionally, until a brown crust forms, about 3 minutes. Add the edamame and cabbage and stir-fry until the cabbage is slightly soft, 2 to 3 minutes.
- Season with the soy sauce, oyster sauce, sugar, mushroom seasoning and salt. Cook until most of the liquid evaporates, a minute or two.
- Pulse the mixture in a food processor 3 to 4 times into a coarse mixture that holds together when squeezed. Transfer to a bowl.
- Knead the rested dough briefly to remove air bubbles, then divide it into 25 equal pieces and roll each into a ball. Keep unused balls covered with a towel.
- Flatten a ball into a disc with your palm, then roll it into a circle 3.5 to 4 inches across. Place a spoonful of filling in the center and pleat into a tight seal. No water is needed. Repeat with the rest.
- Fill a large pot two-thirds full with water and bring to a boil over high heat. Meanwhile, whisk the soy sauce, black vinegar, sesame oil and sugar together until smooth.
- Once boiling, add a drizzle of oil and as many dumplings as fit in one layer. Gently nudge them so they don't stick. Boil until they float, then cook 1 to 2 minutes more until wrinkled. Lift out with a sieve or slotted spoon and repeat with the rest.
- Drizzle the sauce over the dumplings. Top with chile oil, chopped cilantro and toasted sesame seeds.
