Instructions
- Grind all the peri peri seasoning ingredients together in a small jar, or shake them in a container or mix them in a bowl, until blended.
- Slice the chicken into large pieces. In a bowl, mix olive oil, ginger garlic green chilli paste and the remaining marinade ingredients, add the chicken and coat it well.
- Marinate the chicken in the fridge for a few hours, or while you make the sauce.
- Roast the red bell pepper, onion, tomatoes and green chillies over high direct flame, turning them until charred. Take out the chillies first, then the onion.
- Put the tomatoes and bell pepper in a bowl, cover with a plate and rest for 5-10 minutes.
- Heat 1 tbsp olive oil in a pan over high flame. Cook the chicken until golden and slightly charred on one side, flip and cook the other side the same way.
- Rest the cooked chicken on a board for 3-4 minutes before slicing it into strips or pieces.
- Once the tomatoes and bell pepper have cooled, peel off the charred skin and rinse off any black bits. Roughly chop them with the onion and blend with the chillies into a fine puree.
- Heat 2 tbsp olive oil in a deep pan over high flame, add the ginger garlic green chilli paste and cook briefly. Add 1.5 tbsp peri peri seasoning and 1 tsp Kashmiri red chilli powder, stir, then add the puree.
- Cook the puree over high flame for 8-10 minutes, until the oil separates and the puree turns crumbly. If it gets too dry, add a splash of hot water and keep cooking.
- Add hot water until the sauce is semi-thin. Stir in lemon zest, lemon juice and a large pinch of sugar, add the chicken and fresh cream, and mix well.
- Taste and adjust salt if needed, then stir in the chopped fresh coriander.
- For butter rice, melt 2 tbsp butter in a deep pan over high flame, add 4 cups cooked basmati rice and stir-cook for 2-3 minutes.
- Serve the butter rice with the peri peri chicken and sauce spooned over or beside it.
