Instructions

  1. Put the flour, instant yeast, sugar and salt in a large bowl and stir to combine. Slowly pour in the water while mixing with a wooden spoon.
  2. Add the olive oil. Knead the sticky dough in the same bowl with the wooden spoon for at least 5–8 minutes, until elastic.
  3. Cover with cling film and let rise for 1 hour, until doubled in size.
  4. Transfer the dough to a lightly floured surface, cut it into two equal pieces. Shape each piece into an oval loaf by folding all sides under. Cover both with a clean towel and let rise for 1 hour.
  5. Meanwhile, preheat the oven to 200°C / 400°F. Make the glaze by putting all glaze ingredients in a small saucepan over low heat. Whisk for a few minutes until it becomes a thick glaze. Remove from heat to cool.
  6. Place a sheet of parchment paper on a baking sheet and transfer one dough piece onto it. Stretch it with your hands diagonally toward the two corners, then keep stretching the edges into a flat, even oval (about 39 cm long diagonally).
  7. Brush a thin layer of glaze over the dough. Using your fingertips, press indentations lengthwise along the bread about 1 inch (2.5 cm) apart.
  8. Sprinkle with nigella seeds and sesame seeds. Bake for 20 minutes until lightly golden.
  9. Repeat the shaping with the second dough while the first one bakes.
