Phirni Recipe (Rice Firni)

Ingredients

Instructions

  1. Rinse the rice under running water, drain well, and air dry it in the colander or on a cloth.
  2. Heat 3½ cups of the milk in a large pot, stirring often so no cream layer forms.
  3. Grind the dried rice into a slightly coarse powder, not a fine flour. Slightly moist rice is fine.
  4. Mix the ground rice with ½ cup of milk to prevent lumps.
  5. Pour the rice mixture into the hot milk and stir well. Cook on medium heat, stirring constantly, until the rice is fully cooked and the phirni thickens slightly.
  6. Crush the saffron between your fingers and add it with the sugar. Keep stirring often.
  7. When the phirni is thick but still pourable, stir in the cardamom. It is ready when it coats the back of a spoon.
  8. Turn off the heat and stir every few minutes as it cools to prevent a skin forming.
  9. Once cooled, spoon into serving cups or clay bowls and serve chilled or at room temperature.
