Pineapple Sticky Rice Recipe
Ingredients
- Rice540 g
- Pineapple1
- Sugar3–5 tbsp
- Salt½ tsp
- Berry blend⅓ cups
Instructions
- Rinse the glutinous rice several times in clean water until the water runs clear, then soak it for 2 hours. Drain it afterwards.
- Cut the pineapple: cut one-third into chunks and set aside, and blend the remaining two-thirds into about 1 cup of juice. Sweeten the juice with sugar, stir, and set aside.
- Put the drained rice in a small pot with 1 cup + 1/4 cup of water. Bring to a boil over high heat, then reduce to the lowest heat and cook for 6 to 8 minutes.
- Put the cooked rice in a large bowl with the pineapple juice, pineapple chunks, 1/3 cup berry mix and salt to taste. Mix well and adjust the flavour.
- Fill the hollowed pineapple with the rice mixture.
- Top with pineapple pieces and berries. Steam for 25 minutes to bind the flavours and make the rice stickier and softer, or serve as is.
