Ingredients

Instructions

  1. Preheat the oven to 325°F (160°C). Pulse the graham crackers and pistachios in a food processor until finely ground.
  2. Add the melted butter and pulse until combined. If the mixture is too dry to hold together when pressed, add the milk.
  3. Press firmly into the bottom of a 9-inch (23 cm) springform pan and bake for 7–8 minutes. Set aside to cool, then reduce the oven to 300°F (150°C).
  4. In a large bowl, beat the cream cheese and sugar until smooth. Add the pistachio paste and mix until fully incorporated.
  5. Add the sour cream, heavy cream, vanilla, cornstarch and salt and mix on low speed until smooth, scraping down the bowl as needed.
  6. Add the eggs one at a time, mixing on low speed just until each is incorporated. Do not overmix.
  7. Wrap the outside of the springform pan in several layers of heavy-duty foil. Pour the filling over the cooled crust and smooth the top. Set the pan in a larger roasting pan and pour hot water into the roasting pan to about halfway up the sides of the springform.
  8. Bake at 300°F (150°C) for about 60–70 minutes (up to 80 minutes), until the edges are set and the center still jiggles slightly. Start checking at 55 minutes. Do not overbake.
  9. Turn off the oven, leave the door closed and let the cheesecake cool inside for 1 hour. Remove it from the water bath and cool at room temperature for another hour. Refrigerate for at least 6 hours, preferably overnight, until fully chilled and set.
  10. Place the chopped white chocolate in a heatproof bowl. Heat the heavy cream until it just simmers and pour it over the chocolate. Let sit for 1–2 minutes, then stir until smooth. Add the pistachio paste and mix until fully incorporated. Let cool slightly, pour over the chilled cheesecake and spread evenly. Refrigerate for 30–60 minutes, until the topping is set.
  11. Remove the cheesecake from the springform pan and decorate with finely ground pistachios. Slice with a sharp knife, wiping the blade clean between cuts, and serve chilled.
