Pistachio Drop Cookies

Ingredients

Instructions

  1. Pulse the pistachios in a food processor until very finely chopped. Measure out 3/4 cup of the crumbs and set aside.
  2. Beat the butter with a paddle on medium speed for 1 minute until smooth and creamy.
  3. Add the confectioners' sugar, vanilla and almond extracts and beat on medium-high until combined.
  4. Add the flour, the 3/4 cup of pistachio crumbs and the food coloring (if using) and beat on medium-high until combined. The dough will be thick and may look crumbly at first; keep mixing.
  5. Cover the dough tightly and chill for 30 minutes up to 3 days. If chilled 2 hours or more, let it sit at room temperature for at least 30 minutes before rolling.
  6. Make the brown butter icing while the dough chills or the cookies bake: melt the 1/4 cup butter in a light-colored skillet over medium heat, stirring occasionally. When it foams and, after 5-6 minutes, turns lightly browned with specks and a nutty smell, remove from heat right away and cool for 5 minutes.
  7. Whisk the remaining icing ingredients (confectioners' sugar, milk or cream, vanilla, salt) into the cooled butter until smooth. Adjust with more sugar for a thicker icing or more milk for a thinner one.
  8. Preheat the oven to 350°F (177°C). Line large baking sheets with parchment or silicone mats.
  9. Roll the dough into balls of about 1 Tablespoon (20-22g) each and place them 2 inches apart on the sheets. If the dough crumbles, keep rolling it in your hands until it holds together.
  10. Bake for about 14-15 minutes, until the bottoms are lightly browned at the edges and the tops are just barely browned.
  11. Cool on the sheet for 5 minutes, then move to a wire rack and let cool completely before dipping.
  12. Dip the cookies in the icing or drizzle it on top. Lightly coated cookies set in 1-2 hours. Store iced cookies covered at room temperature for 1 day or in the refrigerator up to 1 week; uniced cookies keep covered at room temperature up to 1 week.
