Ingredients

Instructions

  1. Warm the mixing bowl if it is cold, then pour in the lukewarm water (about 40–43°C / 105–110°F) and check it is warm, not hot.
  2. Add the yeast and sugar, stir, and leave undisturbed for 10–12 minutes. If it has not turned frothy after 15 minutes, the yeast is dead: discard and start again.
  3. Add flour, salt and oil to the frothy yeast and mix into a soft dough, adding more water if needed.
  4. Knead for 5–6 minutes until soft and elastic. The dough is ready when a finger poke dents it and it springs back slowly.
  5. Oil the bowl and the dough, cover with a damp cloth or lid, and let it rise at 26–32°C (80–90°F) until doubled or tripled, 1 to 4 hours.
  6. For the sauce, heat oil in a pan, sauté the garlic until fragrant, add the red chili flakes and stir.
  7. Add the chopped or pureed tomatoes, salt and sugar. Cook, partly covered, until thick and spreadable but not runny.
  8. Stir in the herbs and crushed black pepper, taste, adjust seasoning, and set aside to cool.
  9. Bring the vegetables to room temperature, rinse and slice or cube them, drain any bottled olives, and grate or cube the cheese.
  10. Punch the risen dough down, divide into 2 to 3 portions, and shape into balls, dusting with flour if sticky.
  11. Preheat the oven to 220–240°C (470°F) for at least 25–30 minutes with a baking tray or cast iron pan on the middle rack.
  12. Dust the tray with cornmeal, place a dough ball on it, and oil lightly. Stretch and flatten to a thin 9-inch base, with the edges slightly thicker than the centre.
  13. Spread the sauce leaving about ¼ inch at the edge, then add the cheese, vegetables, Italian herbs and chili flakes. Add extra cheese if you like, away from the vegetables.
  14. Slide the tray onto the hot baking tray or pan and bake 10–12 minutes until the base is crisp and golden and the cheese is lightly golden. If the cheese is not golden, move to the top rack for 1–2 more minutes.
  15. For thick crust, stretch the dough to about ⅛ inch with thicker edges, prick the base 8–9 times with a fork, and bake it without toppings for 5–7 minutes, then add toppings and bake 8–10 more minutes.
