Ingredients

Instructions

  1. Peel the plantains and cut them into 1/4-inch slices.
  2. Heat oil in a pan to a depth of 2-3 inches until it reaches 325°F.
  3. Fry the plantain slices a few at a time: about 2 minutes per side, until done. Drain on paper towels.
  4. Heat 2 tablespoons oil in a skillet over medium heat. Saute the onion and garlic until fragrant.
  5. Add the tomato and cook for about 2 minutes. Add the sausage and stir for about 2 minutes.
  6. Add the bell pepper, salt and black pepper and stir for about 2 minutes. Turn off the heat.
  7. Crack all the eggs into a large bowl, add the bouillon powder and whisk. Stir in the sausage and pepper mixture.
  8. Preheat the oven to 350°F.
  9. Grease a pie plate with about 1 teaspoon oil. Pour in the egg mixture and arrange the fried plantains on top.
  10. Bake for 35 minutes. Check that the centre is set; if not, leave it in the oven with the heat turned off for 5-10 minutes.
  11. Garnish with chopped parsley if desired, cut into triangles and serve warm.
