Plantain Puff Puff
Ingredients
- Plantain2
- Flour3 cups
- Yeast2 ¼ tsp
- Salt½ tsp
Instructions
- Pour half a cup of warm water into a large bowl, add the yeast, and set aside.
- Peel the plantains and blend them with the remaining 1 cup of water until smooth (or mash them with a fork and stir in the water).
- Pour the plantain mixture into the yeast mixture, add the salt and stir well.
- Add the flour a little at a time, stirring after each addition, until a batter forms. It should hold together in your hands without falling out quickly. Add more flour if too light, or more water if too thick.
- Cover the batter with plastic wrap and let it rest for about 40 minutes.
- Heat oil in a large pot over medium heat to 350°F (180°C). Drop tablespoonfuls of batter into the oil, without crowding the pan.
- Fry for about 5-10 minutes until golden brown, turning halfway through.
- Drain on paper towels.
