Pommes Anna
Ingredients
- Potato1.6 kg
- Butter160 g
- Salt · flakes1 tsp + 1
- White pepper powder¼ tsp
Instructions
- Preheat the oven to 200°C / 400°F (180°C fan). Brush the base of a 26 cm / 10 inch cast-iron skillet with 2 tablespoons of clarified butter.
- Peel the potatoes and slice them 1.5 mm / 0.6 inch thick on a mandolin. Sort the slices into small, medium and large piles without soaking them in water.
- Make the first layer: place one medium slice in the centre, then build a spiral of medium slices overlapping by about three quarters. Add a larger-slice spiral around it, overlapping the first so the base is fully covered. Tuck small slices into the centre gap.
- Brush generously with clarified butter without disturbing the slices, then season with a third of the salt and the white pepper.
- Repeat the spiral layering, brushing and seasoning, for two more layers.
- Cover the top with a circle of baking paper and bake for 70 minutes.
- Remove the paper and bake a further 30 minutes until the top and edges are deep golden and crisp.
- Rest for 10 minutes, then flip onto a plate and serve immediately.
