Poor Man's Potatoes in Onion Sauce | Classic Recipe from Spain
Ingredients
- Extra virgin olive oil¼ cups
- Onion1
- Garlic4 cloves
- Bell pepper1
- Flour1 ½ tbsp
- White wine½ cups
- Thyme · dried½ tsp
- Chili flake · crushed flakes¼ tsp
- Potato2 ¼ lb
- Vegetable broth3 ½ cups
- Salt
- Black pepper
- Chive · chopped
Instructions
- Peel the potatoes and cut them into bite-sized pieces about 2 cm (3/4 inch) thick. Cut the onion into thin slivers, roughly chop the garlic and finely chop the green bell pepper.
- Heat a large fry pan or stockpot over medium heat and add the olive oil.
- After a couple of minutes, add the chopped vegetables (not the potatoes) and stir constantly. When the onions are slightly translucent, after about 5 minutes, add the flour and stir for 2 minutes.
- Add the white wine, thyme and crushed red pepper, mix and simmer. Simmer the wine for 3 minutes until the alcohol has cooked off.
- Add the potatoes, season with salt and pepper and mix well. Add the vegetable broth, raise to high heat and stir gently.
- When it boils, cover the pan and lower to low-medium heat. Simmer for 20 minutes, or until the potatoes are just cooked through, shaking the pan now and then to help thicken the sauce.
- Transfer the potatoes and sauce to a large serving dish and top with chopped chives.
