- Cayenne pepper¼ tsp
- Canola oil2 ½–3 ½ cups

Instructions
- Cut the chicken into 1.25 cm cubes.
- Whisk the buttermilk marinade ingredients in a bowl, add the chicken, stir to coat, and refrigerate for at least 1 hour (no more than 24 hours).
- Mix the flour, cornflour, salt, celery salt, pepper, paprika, thyme, oregano, onion powder, garlic powder, mustard powder, ginger powder and cayenne in a large bowl.
- Drizzle 3 tablespoons of the marinade into the flour mixture and rub it in with your fingers to make small clumps.
- Preheat the oven to 50°C to keep the cooked chicken warm.
- Lift a handful of chicken from the marinade, scatter it over the flour, spoon flour over it and toss to coat.
- Separate the pieces, press the flour on, then shake off the excess and spread the chicken on a tray. Repeat with the rest.
- Just before frying, briefly re-toss each batch in the flour on the tray and make sure the pieces are not stuck together.
- Line a tray with paper towels. Heat oil in a heavy pot to a depth of 2.5 cm and bring it to 180°C over medium-high heat.
- Shake off the excess flour, lower the chicken into the oil and fry for 2 to 2.5 minutes until golden, separating any pieces stuck together halfway through.
- Drain the chicken on the paper towels, keep it warm in the oven, and repeat with the remaining chicken.
