Pork Adobo
Ingredients
- Pork shoulder1 kg
- Vegetable oil8 tsp
- Onion1
- Garlic8 cloves
- Soy sauce½ cups
- Dark soy sauce1 ½ tsp
- Rice wine vinegar¼ cups
- Brown sugar3 tbsp
- Peppercorn1 ½ tsp
- Bay leaf5
- Pineapple6
- Scallion1
- Rice2
Instructions
- Heat the oil in a large heavy pot over high heat. Sear half the pork until golden all over, about 4 minutes, then transfer to a bowl. Repeat with the rest of the pork and add it to the bowl.
- Reduce the heat to medium. Cook the onion for 2 minutes, then add the garlic and cook for another minute until the onion softens.
- Add the water, both soy sauces, the vinegar, sugar, peppercorns and bay leaves, and stir. Return the pork with any juices from the bowl.
- Bring to a boil, then partly cover the pot, leaving a 2 cm (1 inch) gap, and reduce the heat so the liquid barely simmers. Simmer for 1 1/2 hours, or until the pork is fall-apart tender, continuing longer if it is not yet tender.
- Meanwhile, heat the oil in a non-stick pan over medium heat. Fry the pineapple in one layer until golden on each side, about 4 minutes per side. Set aside.
- Remove the pork with a slotted spoon. Boil the liquid on high heat until reduced to 1 1/2 cups (375 ml), about 7 to 10 minutes; it should be a thin syrup.
- Reduce the heat to low. Return the pork, pineapple and any juices, stirring gently until warmed through.
- Serve over jasmine rice, topped with green onion if using.
