Pork and Mash
Ingredientes
- Potato800 g
- Pork400 g
- Salvia2 ramitas
- Queso cheddar40 g
- Prosciutto4 rebanadas
Preparación
- Preheat the grill to high.
- Cut the potatoes into 3 cm chunks and boil them in a large pan of salted water with the lid on for 12 minutes, until tender.
- Meanwhile, heat a shallow casserole over high heat.
- Season the pork with sea salt and black pepper, then sear it in the pan with 1 tablespoon of olive oil for 3 minutes, turning often.
- Take the pork out. Fry the sage leaves in the fat for 5 seconds, then remove them and leave the pan off the heat.
- Drain the potatoes and return them to the casserole. Grate over half the cheese, add 1 tablespoon of extra virgin olive oil and mash well, loosening with a splash of water if needed.
- Taste and season the mash, then spread it to the edges of the pan. Grate over the remaining cheese, place the pork on top, and grill for 10 minutes to gratinate.
- Arrange the prosciutto around the pork in waves, scatter over the crispy sage, and grill for 2 more minutes, until the pork is cooked to your liking.
- Rest the pork for 2 minutes, then slice and serve.
