Pork Belly Kakuni with Daikon and Eggs
Ingredients
- Onion1
- Pork belly2 lb
- Ginger1 piece
- Scallion3
- Daikon1 ½ lb
- Egg4
- Oil1 tbsp
- Sugar½ cups
- Soy sauce½ cups
- Sake½ cups
Instructions
- Thinly slice the onion. Cut the pork belly into strips that fit your pressure cooker pot.
- Put the onion and pork in a pressure cooker or Instant Pot and add enough water to cover. Pressure cook for 30 minutes, or until the meat is very tender, then let the pressure release naturally. Without a pressure cooker, use a large heavy pot such as a Dutch oven and simmer for 3 hours until the meat is very tender.
- Cut the daikon into 1-2 inch rounds, peel, and halve. Boil for 10 minutes until soft. Boil the eggs for 7 minutes.
- Remove the pork from the pot and cut into about 12 pieces. Discard the onion.
- Heat oil in a pan or wok with the green onions. Remove the green onions once browned and discard them. Cook the pork pieces until their surfaces are slightly browned.
- Add the soy sauce, sake and sugar. Add the boiled daikon and eggs and cook, stirring occasionally, for 10-15 minutes until the sauce thickens.
