Pork Carnitas
Ingredients
- Pork · boneless2–2 ¼ kg
- Onion · peeled diced1
- Garlic · peeled minced5 cloves
- Orange juice120 ml
- Salt2 tsp
- Black pepper1 tsp
- Chili flake · flakes1 tsp
- Oregano · dried1 tbsp
- Cumin2 tbsp
- Oil2 tbsp
Instructions
- Put the pork in the slow cooker fat side up.
- Arrange the onion and garlic around the sides of the pork, then pour over the orange juice. The liquid looks small but the pork will release more as it cooks.
- Sprinkle over the salt, pepper, chilli flakes (if using), oregano and cumin.
- Cook on low for 9-10 hours or on high for 7-8 hours.
- Lift the pork out onto a board. Shred it into pieces and discard any large chunks of fat.
- Heat the oil in a large frying pan over medium-high heat. Add the shredded pork, leaving as much liquid behind as possible.
- Fry for 8-10 minutes, turning only occasionally, until crispy bits form.
- Add about 240 ml (1 cup) of the cooking juices and let it bubble for a few minutes.
- Turn off the heat and serve with the remaining cooking liquid for drizzling.
