Portuguese Chicken and Rice - one pot dinner!
Ingredients
- Chicken thigh500 g
- Paprika2 tsp
- Garlic powder1 tsp
- Oregano · dried1 tsp
- Cilantro¼ tsp
- Cayenne pepper¼ tsp
- Brown sugar1 tbsp
- Salt1 ½ tsp
- Extra virgin olive oil3 tbsp
- Lemon½ tbsp
- Garlic2
- Onion1
- Bell pepper1
- Rice1 ½ cups
- Chili flake · flakes¼ tsp
- Turmeric · powder2 tsp
- Chicken stock2 ¼ cups
- Pea · frozen1 cup
- Perinaise
- Scallion
Instructions
- Mix the chicken seasoning ingredients in a bowl, add the chicken and toss to coat. Set aside while you prepare the rest (or overnight, if you like).
- Heat 2 tablespoons of oil in a large heavy pot over high heat. Add the chicken and cook until the outside is sealed and has some colour. Remove with a slotted spoon to a bowl, leaving the oil in the pot.
- Add the garlic and onion to the pot and cook for 1 minute. Add the capsicum and cook for 1½ minutes, until the onion is translucent.
- Add the rice and stir to coat it in the oil. Add the remaining rice ingredients, then spread the chicken evenly over the top along with any juices in the bowl. Stir and bring to a simmer.
- Cover with the lid, lower the heat to medium-low so it simmers gently, and cook for 15 minutes without peeking or stirring. The liquid should be absorbed.
- Remove the pot from the heat and rest, covered, for 10 minutes.
- Remove the lid, gently fluff the rice, and serve topped with your sauce and sliced green onion.
