Ingredients

Instructions

  1. Boil water in a kettle. Crush the garlic and ginger, put them with the dried shiitakes, kombu, peppercorns, salt and 3 1/2 cups of water into a large jar or bowl, pour in the hot water, and let it soak for 6 to 8 hours or overnight.
  2. Preheat the oven to 375°F and bring a pot of water to the boil for the noodles.
  3. Remove the stems from the fresh shiitakes and slice the smoked tofu. Put the shiitakes, tofu and broccolini in a bowl, drizzle with avocado oil and toss to coat.
  4. Spread the vegetables on a baking sheet and bake for 5 to 7 minutes.
  5. Pour the dashi into a small saucepan and bring it to the boil.
  6. Cook the ramen noodles for 3 minutes, or as the package says.
  7. In the serving bowl, whisk together the soy sauce, maple syrup, dark soy sauce and toasted sesame oil.
  8. When the dashi boils, pour it into the serving bowl. Drain the noodles, add them to the broth, then arrange the baked vegetables on top, spoon over the scallion ginger oil and sprinkle with black sesame seeds.
