Instructions
- Boil the diced potatoes in salted water until fork-tender, about 15–20 minutes. Drain well and mash until smooth. Let cool slightly.
- Heat the oil or butter in a skillet over medium heat. Cook the diced onion until soft and lightly golden, about 5 minutes. Add the scallions and cook for another minute. Take off the heat.
- In a large bowl, mix the warm potatoes, onion mixture, feta, cream cheese, dried herbs, red pepper flakes if using, salt and pepper until creamy and well combined. Taste and adjust the seasoning.
- Cut each puff pastry sheet (15 x 10 inches) into 12 equal rectangles: 3 lengthwise strips, then 4 pieces each.
- Put about 2 tablespoons of filling on one half of each rectangle, leaving a small border. Brush the edges with egg wash, fold over and press to seal. Crimp with a fork.
- Place on parchment-lined baking sheets and brush the tops with egg wash. Chill in the fridge or freezer for 15–20 minutes.
- Bake in a preheated 400°F oven for 20–25 minutes, until puffed and deeply golden.
- Let cool slightly before serving.
