Potato fry recipe | Aloo fry | How to make potato stir fry
Ingredients
- Potato1 ¼ cups
- Oil1 ½ tbsp
- Mustard seed¼ tsp
- Cumin½ tsp
- Garlic1–2
- Urad dal½ tsp
- Curry1 sprig
- Chili pepper · dried1
- Asafoetida0.13 tsp
- Turmeric0.13 tsp
- Chili powder½ tsp
- Garam masala¼–½ tsp
- Salt⅓ tsp
Instructions
- Wash and peel the potatoes, then cut them into roughly ½-inch cubes. Keep them in water until needed to remove excess starch and prevent sticking.
- Crush or chop the garlic and rinse the curry leaves, setting them aside.
- Heat oil in a heavy non-stick or cast-iron pan. When hot, add cumin, mustard seeds, dried chili and urad dal (if using), and fry until the dal turns golden.
- Add the curry leaves and garlic. When the garlic is lightly fried, add the asafoetida.
- Drain the potatoes and add them to the pan with the turmeric. Fry over medium heat for 3 to 4 minutes, stirring often.
- For crispy potatoes, keep stirring uncovered until fork tender, adding more oil if you like. For soft potatoes, lower the heat, cover and cook until fork tender, stirring occasionally to prevent burning.
- Check that the potatoes are cooked through by pricking them with a fork; they should not feel hard inside. If they do, cook a little longer.
- Sprinkle in the red chili powder, salt and garam masala, toss well and fry for a minute or two to blend. Add a teaspoon of oil at this stage if you like.
