Ingredients
- Potato · peeled1 ½ lb
- Onion · grated1 + 1 tbsp
- Egg1
- Flour3 tbsp
- Sour cream1 tbsp
- Salt1 tsp
- Black pepper0.13 tsp + 1 pinch
- Vegetable oil
- Ground pork½ lb
Instructions
- Grate the peeled potatoes on the star grater into a large bowl until they are like applesauce in texture. Skim off any liquid that rises to the top.
- Grate the onion into the same bowl, keeping 1 tablespoon of the grated onion aside for the meat filling.
- Add the egg, 3 tablespoons flour, 1 tablespoon sour cream, 1 teaspoon salt and 1/8 teaspoon black pepper to the potato mixture and stir well.
- Mix the ground pork with the reserved 1 tablespoon grated onion, 1/4 teaspoon salt and black pepper to taste. Shape into 16 thin patties.
- Heat 2 to 3 tablespoons oil in a large non-stick skillet over medium heat. Drop 1 tablespoon of potato mixture into the pan and flatten it. Top with a thin pork patty, then cover with another tablespoon of potato batter.
- Fry until golden brown, flip, and cook until golden and cooked through, about 4 minutes per side. Repeat with the remaining batter, adding oil as needed.
- Drain on a paper towel-lined plate and serve with sour cream.
