Ingredients

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. If not using an egg, mix the ground flax seeds with the water and set aside.
  3. Heat oil in a pan over medium heat. Cook the onion, stirring often, until just softened.
  4. Add the garlic, cumin, red pepper flakes, oregano and salt, and cook until fragrant. Set aside to cool slightly.
  5. In a food processor, pulse the walnuts and oats until very finely chopped, like coarse meal. Transfer to a mixing bowl.
  6. In the food processor, pulse the beans until finely chopped but not puréed. Add them to the bowl.
  7. Add the cooked onion mixture, egg (or flax gel), cilantro, lime juice and soy sauce to the bowl. Mix until well combined.
  8. Shape into balls and place on a baking sheet.
  9. Bake for 20 to 25 minutes, until firm and lightly browned on the bottoms.
  10. For the sauce, in the same pan, cook the onion, banana pepper and garlic until translucent.
  11. Pour in the wine and reduce by two-thirds, then stir in the tomato purée and simmer over medium heat.
  12. Add the basil and cook for 5 to 10 minutes.
  13. Combine the bean balls with the sauce and serve.
